Whipped Cream Scones with the Historic Stewart Farm

This historical recipe is just simply delicious. Usually baked in our wood stove, these scones will taste amazing if you give them a shot.

These scones have traditionally been baked for our picturesque teas at the Historic Stewart Farmhouse. Flaky, buttery, and delicious they'll be a hit for your family. You'll need:

2 Cups Flour

1/4 Cup White Sugar

2 tsp Baking Powder (Add a pinch more to have the scones rise better)

1/4 tsp Salt

1/3 Cup Cold Unsalted Butter (cut into pieces, or grated with a cheese grater)

1 Egg (lightly beaten)

1 tsp Vanilla

½ Cup Whipping Cream

A large mixing bowl

Mixing and measuring spoons

Pastry cutter, or two knives

Baking Pan(s)

Parchment paper

Brush, to brush excess whipping cream over top

The City of Surrey Heritage Services Department runs various parts of Heritage within the City of Surrey, including Heritage Collections, the Surrey Archives, the Re-enactors, and the Historic Stewart Farm. The mandate of our division is to share the diverse history of the Municipality of Surrey with our community. Our vision is to create a better community that reflects on the past.

Recently as part of our shift towards online programming these institutions have begun to focus on digital and remote programming, instead of in person interpretation. This recipe is based off of our Afternoon Teas, usually held in the Farmhouse at the Historic Stewart Farm.
