About
Yam is a staple dish in every Nigerian home. You can eat it boiled, fried, roasted or in Yamarita!! It can be an Hors D’oeuvre or the main meal. Yamarita is also a term of endearment. Go figure! So instead of Sweetie Pie, you can say Yamarita!
Delish Kitchens will be showing us how to make Yamarita & Mackerel Sauce.
Delish Kitchens is a food ordering, catering and delivery service based in the Greater Toronto Area which features delicious African and Western cuisine. Ingredients
Yam. Flour. Egg. Paprika. Garlic Salt. Seasoning. Oil. Mackerel. Butter. Onions.
Scotch bonnet. Hot pepper fingers. Sheppard pepper. Spring onions.
**Yamarita**
Wash the yam thoroughly, place in a small pot add water to cover the yam, boil on medium heat for 10 minutes…
Boil till its tender but still very firm, remember you’re still going to fry the yam to complete the cooking process. Drain the water afterwards and leave to cool.
On a flat plate, combine the flour, pepper, bouillon cube, curry powder and other spices and set aside.
Break the egg into a flat plate, add salt to taste and set aside, you can also add a bit of seasoning.
Dip each yam into the egg mixture
When that’s done, place each yam into the flour mixture, coat the yam chunks with the flour mixture ensuring each yam is well covered. When you’re done coating the yam, set them on a flat plate
Then dip each flour coated yam into the egg mixture, ensure the egg mixture covers the yam as much as possible…
Now add the cooking oil into a hollow pan, set it on low-medium heat, when the oil heats up, dip each flour and egg coated yam into the oil and fry on all sides till slightly brown.
Your Yamarita is ready!
**Mackerel Sauce**
Wash, cut and season your mackerel fish with salt, then grill, bake or pop it into an airfyer for 15mins and then flip to the other side.
After fish is completely cooked, debone it and set aside.
In a wok/pan, add some butter, then add onions nicely chopped, Sautee for 4mins, then add some oil, then add the roughly blended pepper and onion mix, and fry on medium heat for 10 to 10mins.
Add seasoning, then add your deboned fish, allow to fry for 3- 5mins to soak up some of the flavour.
Your mackerel sauce is ready!
