Have you heard about Nigerian Fried Rice? It's the yummiest fried rice ever!

Food Delicio is a premier food caterer in the GTA. Her happy place is her kitchen. Her passion for cooking is deeply rooted in her upbringing, when she saw her mum happily feed everybody in the neighbourhood. Her mum was a great cook so she learnt from the best. Food Delicio is going to show us how to make this special Nigerian Fried Rice. Enjoy!

Ingredients

6 cups of Rice(golden sella basmati or long grain rice). 5 large Smoked sausages

500g of Shrimps. 2 Spring onions. 3 large Carrots. 3 cups of Corn. 2 cups of Peas

125ml of Oil. Seasoning to taste. Bayleaf. 1 Onion. 3 cups Broth.1 teaspoon Tumeric or curry. 1/2 teaspoon of Thyme. Oregano(Pinch)

Recipe:

1. Defrost peas & corn by running cold water over it & set aside to drain.

2.Wash & dice spring onions, carrots & onion.

3.Peel & wash shrimps, add some seasoning. Set it aside.

4.Dice the smoked sausages & set aside.

5.Wash rice and set aside to drain.

6.Place the pot on the stove, add little oil on medium heat.

7.Throw in the bayleaf and bulb onion,add the tuneric and stir fry for about 3mins,add the washed rice and mix together.stir for about 5 mins.

8.Add 4 cups of broth to the rice and add then add 2 cups of water.

9.Cover with foil and allow to cook.

10.Fry other ingredients in another pot, start with the shrimp, add the smoked sausages, allow to fry for about 4 mins, then add the carrot, a sprinkle of seasoning and fry for another 2 mins.

10.Fry the corn and peas in another pot with a sprinkle of seasoning for about 5mins.

11.Check your rice to see if its soft and the water is dry, add spring onions and stir

12.Add all the fried ingredient into the fried rice and mix all together.

13.Serve with your choice of meat.
